I would say start ur new job on the day ur supposed to. It's up to the company to manage their own human resources problems, it's their responsibility to ensure they have suitable staff for the work they want done. But you should raise it with HR or a manager, make sure they are aware of the problem, outline that u can't do two jobs at once, and suggest they get a temp in for two weeks.
